February baking dates; longer range schedule
Here is the baking schedule and menu for the remainder of February.
Thursday, Feb 16 multigrain, golden multigrain, miche, baguettes
Friday, Feb 17 semolina, olive, baguettes
Thursday, Feb 23 multigrain, seeded rye, baguettes
Friday, Feb 24 semolina, olive, baguettes
I will not bake during March, but will return to baking near the beginning of April. As usual, I will send out reminders of impending baking dates.

gotta tweak the dates
Breaking the bake into two days is proving to be a godsend. So, for the foreseeable future, I will continue to do it.
For Thursday the menu will be:
The first week of February , I will bake brown breads on Wednesday, February 1st and the white breads on Thursday, February 2nd. This burp in the Thursday-Friday schedule is due to an unavoidable appointment on Friday, Feb. 3rd. All I am doing is pushing the schedule back one day. The menu will be, for Wednesday:
- multigrain, seeded rye, mixed grain miche and baguettes.
- semolina, olive, pain au levain and baguettes.
I will continue to post weekly reminders of the dates and menus.

bread for week of January 26th and 27th
The menu for this week will remain what I posted earlier: multigrain, mixed grain miche, semolina, pain au levain boules and baguettes. But, I need to divide the bake into a two-day event.
So, for Thursday, January 26th I will bake the brown breads: multigrain and mixed grain miche plus baguettes.
For Friday, January 27th I will bake the white breads: semolina and pain au levain boules plus baguettes.
I regret causing confusion, but hope you will bear with me. Not only will I be warmer, but this arrangement will be better for the bread as well.

Baking dates and menu
The next baking date will be Friday, January 20th and the breads will be
- multigrain
- golden multigrain
- olive bread
- baguettes and pain au levain boules
I will also bake on Friday, January 27th and the breads will be
- multigrain
- mixed grain miche
- semolina
- baguettes and pain au levain boules
The baking dates for February will be Thursday, February 2nd (groundhog day--one of my favorite holidays), and both Fridays, February 17th and 24th. I will post the menus for the February bakes later.
As always, please place your order at least two days before the day you want bread.

Ring in the New Year
Prairie Flour Bakery is ready to start off the new year by firing up the oven and baking bread. I will bake this coming Friday, January 6th and the breads will be:
- multigrain
- seeded rye
- semolina
- baguettes
Starting this week, you can place your order directly from the blog home page. Scroll down and on the right hand margin you will see the order form. In addition to sending me your order, it will send you a confirmation that I have received your order. Hats off to the Blogmeister, Kevin Crawley!
One caveat: if you place your order from the blog, do not also order via email.
Please try to get your order in no later than noon on Wednesday, January 4th. If your order comes in later than that, I will try to fill it, but cannot promise that I will be able.

December baking
Before I get down to business with this post let me say Thank you to everyone who has supported Prairie Flour Bakery this past year. My special thanks to all of you who keep ordering bread, even when loaves don't turn out as I would like. And a special special thanks to Linda who gives moral support, time, and a "good hand". I learn something new about leaven, or fermentation, or the workings of my oven just about every week of baking, all of which feeds my spirit. I always hope this bright feeling somehow shows up in the bread I bake for you. May we all enjoy peace and joy in the coming holiday season and on into the new year.
I will bake Friday December 16th. The types of bread will be multigrain, rye, semolina and baguettes.
I will also do a pre-holiday bake on Friday, December 23rd for those who may be having company or otherwise planning a special meal...or just plain eating. I am not sure yet about which types of bread because I am still waiting to see if my shipment of olives will be delivered in time. So, for now I can only say that I will definitely bake multigrain, golden multigrain and baguettes.
If you know what you will want either of those dates, feel free to place your order right away. Otherwise, be sure to get your order in by noon of the Wednesday before bake day. I will let you know as soon as I can about the olive bread.
